It's a Thursday morning and I'm engrossed in conversation with me oul' pal Brian Mulligan in Sean's Diner in his native Cootehill. We're dissecting and analysing life's ups and downs and nearly forgetting that we have a job to do, so much ground are we covering.
Behind the counter serving quite a few other breakfast diners is Helen Murray. Now there, Brian tells me, is a woman who knows something about covering ground in more active a fashion. When Helen's not running around this buzzing café with a tray or a cloth, she's often out in her trainers pounding the roads, frequently alongside her two 20-something daughters.
