The dishes (featured in the photo here) are: Scorched tamarind and turmeric cured Clare Island salmon, beetroot, caviar, Mulranny seaweed, Achill Sea Salt, burnt cucumber aioli, pan fried Clew Bay mackerel, mackerel mousse, Ceylon spiced tomato chutney with potato ball, curried cauliflower, Kelly’s Black Pudding Soil, Clew Bay wild clams dressing as well as Keem Bay lobster and brown crab salad, Sinead’s orchard apple reduction, squid ink tuille, yuzu and cucumber gel and sea lettuces.
