Spanakopita (spinach and feta pie)

Our version of the Greek classic, spanakopita. Slice through the crispy filo pastry and enjoy an amazing taste sensation.

INGREDIENTS

(Serves four, 5.5 syns per serving)

1kg frozen spinach

Bunch of spring onions, finely chopped

Small handful of fresh parsley, finely chopped

Small handful of fresh dill, finely chopped

100g reduced-fat feta cheese, crumbled

250g low-fat natural cottage cheese

Two garlic cloves, crushed

Pinch of freshly grated nutmeg

Three eggs, lightly beaten

Low-calorie cooking spray

Two x 45g ready-rolled filo pastry sheets, halved

METHOD

Preheat your oven to 180°C/Fan 160°C/Gas 4.

Cook the spinach according to the packet instructions, then tip into a colander. Press out the excess liquid and squeeze dry with kitchen paper or a clean tea towel. Roughly chop and set aside to cool in a large bowl.Add the spring onions to the spinach along with the parsley, dill, feta, cottage cheese, garlic and nutmeg. Season to taste and mix to combine then pour in the eggs and mix again.

Spray a 30 x 20cm ovenproof dish with low calorie cooking spray and spoon in the spinach mixture. Lightly spray the filo sheets with low-calorie cooking spray and scrunch them over the top of the spinach mixture to cover. Bake for 30-35 minutes, or until golden, and serve warm with your favourite potatoes and salad.
