The perfect ingredients for a wonderful cook book

Dust off your rolling pin and tie up your apron because a Cavan based cookbook has just launched.

The Created In Cavan Cookbook includes recipes from the county's renowned food professionals, and incorporates local produce to make your meals as fresh and tasty as possible.

The long awaited cookbook was launched last Tuesday in one of Cavan’s top restaurants, the Oak Room. It was a fitting venue as proprietor and chef at the Bridge Street restaurant Norbert Neylon is a contributor to the book, the proceeds of which will go to local charities.

“What I love about this is that it’s from the people of Cavan, recipes that they have put into this book,” said Norbert. “For some of them it’s recipes they cook at home every day and it’s about local produce, local people, it's what Created in Cavan is all about really. I think it’s just fantastic and it’s a testament to everyone that was involved.”

Cavan Celebrity Chef Shane Smyth echoed Norbert's sentiments at the launch, saying “I’m really delighted to be here as a fellow Cavan person and to be able to see a book that’s jam packed full of beautiful local Cavan products.

“Supporting local, shopping local, I think we all know the importance of that, and I think this book highlights that and highlights the amazing quality of food and produce that we have in Cavan so again, this book really is to be celebrated.”

Outlining the contents of the book, the chef and Anglo-Celt columnist continued, “There are 61 delicious recipes in the book so there are 17 light bites, 21 main courses, 11 desserts, six tea time treats and six gorgeous beverages in there. So there is such an array of starters, mains and desserts, and there are some tasty desserts in there from the pair of us,” he laughed, referencing Norbert in the seat beside him.

“It’s phenomenal to be a part of something as special as this. Not only are we hoping this book will cement Cavan as one of the best counties in Ireland when it comes to food production but we’re also hoping this book will inspire and get people back into the kitchen.”

The chef also thanked everyone who contributed to the creation of the cookbook.

This included the agriculture, food and marine area of Cavan County Council who funded it’s creation, Ronan Ward from Home Bird for designing and publishing the book, members of the committee and those who contributed their own personal recipes.

“Thank you to everyone who provided a recipe, without recipes it’s not much of a cookbook really.”

He also thanked Norbert and the Oak Room for the fantastic evening and delicious food.

The aim of the recipe book is not only to encourage people to shop locally and produce their own delicious food, but to raise funds for three fantastic local charities, Cavan Autism Parents Support, Breffni Blues Special Olympics Club and Cuan Cancer Support Centre.

The Created in Cavan Cookbook is on sale for just €15 from Chapter One, Connolly Bros, Candlelight Book Store and Hawthorn Lodge B&B, Belturbet and Sushi Mania, Virginia.
