Pizza Fritatta and Chips

A WORD FROM THE CHEF

If you fancy some comfort food, without the high calories, check out this fakeaway recipe. It will hit the spot!

INGREDIENTS

• Four baking potatoes, cut into chips (just the way you like them!)

• Low-calorie cooking spray

• Eight large eggs

• 3tsp dried oregano

• 6tbsp passata

• ½ red onion, thinly sliced

• 50g button mushrooms, thinly sliced

• One green pepper, deseeded and sliced

• Eight pitted black olives in brine, drained and sliced

• 75g reduced-fat/light mozzarella, torn into small chunks

• Four Little Gem lettuces, roughly chopped

METHOD

Preheat the oven to 200°C/fan 180°C/gas 6. For the perfect Slimming World chips, boil them for three to four minutes, then drain well. Spray with low-calorie cooking spray, toss lightly, then spread in a single layer on a baking tray. Season lightly and bake for 20-25 minutes, turning halfway through, until crispy and golden.

While the chips are cooking, beat the eggs with 2tsp oregano and some seasoning.

Spray a large ovenproof non-stick frying pan with low-calorie cooking spray and place over a low heat. Add the eggs and cook for four to five minutes, or until almost set.

When the chips are nearly done, preheat your grill to high, then grill the frittata until set and golden. Remove from the grill and spread over the passata, scatter over the veg and olives and top with the mozzarella and remaining oregano.

Pop back under the grill until bubbling.

Twist over some black pepper, slice into four and serve with the chips and lettuce.
