A WORD FROM THE CHEF

Here is a nice no bake traybake recipe. We love mint in our house and, in the warm weather, it’s nice to have a cool treat you don’t have to put the oven on for!

INGREDIENTS

115g butter

4tbsp golden syrup

400g digestive biscuits

180g Aero bubbles

200g milk chocolate

A large Aero bar

METHOD

Line a 9” X 9” tin with baking paper.

In a saucepan place the butter and syrup and melt over a gentle heat until the butter is melted then set aside.

In a large bowl, crush your biscuit using a rolling pin (or you can do this in a food processor until a fine crumb) and then pour in your melted butter mixture and stir to combine well.

Add in your aero bubbles and stir them through; finally crush your aero bar and add half to this mixture keeping the other half for the top.

Pour this mixture into your prepared tin and press down well making sure the top is smooth.

Melt your milk chocolate and pour over the and spread out then sprinkle the remaining aero bar on top and place in the fridge to set for an hour or two.

Once set, remove from the tin and cut into squares and enjoy!
