Moran’s Blackcurrant & Guinness Jam Viennese Whirls

A WORD FROM THE CHEF
This recipe takes 25 minutes to prep and the only about 13-15 minutes for the biscuits to bake. Using some quality local produce, it's well worth the effort. Go on, give it a whirl!
INGREDIENTS
(Makes 24 biscuits or 12 sandwiches)
For the biscuits
250g very soft butter
50g icing sugar
A dash of vanilla essence
225g plain flour
25g cornflour
For the filling
150g Moran’s Blackcurrant & Guinness Jam
150g unsalted butter
A dash of vanilla essence
150g icing sugar
METHOD
Preheat your oven to 190C/170C fan.
Line two baking trays with parchment paper, set aside.
In a bowl, cream the butter, vanilla and icing sugar together until pale and soft.
To this add the sieved flour and cornflour, mix well.
Spoon the batter into a piping bag fitted with a medium star shaped nozzle and pipe 12 biscuits on each tray.
Place in the centre of the oven and bake for 13-15 minutes or until lightly golden brown.
Remove and allow to cool.
For the filling, in a bowl, cream the butter, vanilla and icing sugar until soft and smooth.
Place this into a piping bag fitted with a small round nozzle.
To assemble, pipe a circle of buttercream on the flat side of 12 of the biscuits, leaving space in the centre for the jam.
Spoon some Moran’s Blackcurrant & Guinness Jam into the centre and sandwich with another biscuit. Enjoy.
