Pizza Pittas

A WORD FROM THE CHEF

This easy, delicious lunch can be on your plate in just 20 minutes!

INGREDIENTS

Low-calorie cooking spray

One shallot (or a couple of spring onions), finely chopped

One small red or yellow pepper, deseeded and roughly chopped

½ tsp dried herbs

Four cherry tomatoes, chopped

60g wholemeal pitta bread

70g reduced-fat mozzarella, cut into chunks (or 40g reduced-fat Cheddar, grated)

Fresh oregano, leaves picked, to serve

METHOD

Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the shallot (or spring onions), pepper and herbs and cook for about five minutes or until they start to soften. Add the tomatoes and cook for a few more minutes.

Halve the pitta bread into two, scatter over the cheese and lightly toast. Top with the cooked veg and sprinkle with fresh oregano to serve.
