Garlic & Herb Chicken with Gnocchi

INGREDIENTS

Zest and juice of one lemon

Five garlic cloves

2tbsp oil

Fou chicken breasts or skinless boneless thighs

Two sprigs of thyme & rosemary

Knob of butter

500g cherry tomatoes

500g gnocchi

Handful of basil

Parmesan to finish

METHOD

Firstly marinade the chicken in a bowl. Crush the garlic, zest the lemon and juice it, chop the rosemary and thyme. Place it all into a bowl and mix it through with the chicken.

Heat the oil in a frying pan and fry the chicken until golden on both sides. Add in the tomatoes and reduce the heat to simmer. Allow them to cook with the chicken for 10-15 minutes until the chicken is cooked through.

In a saucepan of salted boiling water boil the gnocchi until it floats to the surface. Remove with a slotted spoon and add straight to the tomatoes and chicken. Add the knob of butter and basil and serve with parmesan.
