A WORD FROM THE CHEF
We very much enjoy this cake as it very light and soft in texture thanks to the coconut milk and is perfect with a cuppa. You can also change the drizzle for some jam on top and sprinkle with coconut, this would be lovely too.
INGREDIENTS
For the cake
185g butter
185ml coconut milk
250g caster sugar
250g self raising flour
3 large eggs
30g coconut
For the drizzle
3tbsp icing sugar
1tbsp coconut milk
Toasted coconut
METHOD
Preheat your oven to 1600C (fan) and line a 2lbs loaf tin.
This cake is made using the all in one method, which makes it super easy to make. So pop all your ingredients into a large bowl and whisk together with and electric mixer until all the ingredients are well combined.
Pour your batter into the prepared tin and bake for one hour or until a skewer comes out clean.
When cooked remove from the oven and allow to cook in the tin for about 10 minutes and then transfer to a cooling rack to cool fully
To make the drizzle mix the icing sugar and the coconut milk together and pour over the cake and toast some coconut in a dry pan until just slightly golden and sprinkle on top!
