CHEF'S DELIGHT: Apple cake

A WORD FROM THE CHEF

I am very lucky to have friends who supply me with apples at this time of the year so this is a perfect cake to use them up and it makes a lovely dessert served with custard or even just enjoy with a cuppa.

INGREDIENTS

225g self raising flour

1tsp baking powder

175g caster Sugar

Two eggs

2tsp cinnamon

150g butter melted

300g cooking apples peeled and sliced

25g flaked almonds

METHOD

Preheat the oven to Oven 150c and line an 8” loose bottom cake tin.

Place all the ingredients except the almonds into a large bowl and whisk until blend)ed.

Spoon half the mixture into the bottom of the tin and spread out. Place your sliced apples on, piling them in the centre.

Spoon the rest of the mixture on top and smooth out as best you can.

Don’t worry if all the apples are not covered, the mixture will find its own level as it bakes.

Sprinkle with the almonds and pop in the oven for 60 to 90 minutes until the cake has risen and is golden brown.

Allow to cook in the tin for about 10 minutes and then take out of the tin and allow to cook fully.

Serve with some custard or cream or both!
