Chef's Delight: Christmas shortbread cookies

A WORD FROM THE CHEF

These are a lovely cookies to make for Christmas and decorate with the kids and perfect to leave out for Santa on Christmas Eve.

INGREDIENTS

225g real butter

115g icing sugar

225g plain flour

115g cornflour

METHOD

Oven 190c for 10-12 minutes

Cream together the butter and icing sugar using a mixer or food processor.

Add the flour and cornflour and mix together until a dough is formed. this may take a few minutes and, if you think it’s not coming together use, your hands to bring it together.

Tip out on a floured surface and roll out to about half inch thick and cut into your desired shape and place on a lined baking sheet.

If you find it hard to roll out, you can roll it between two sheets of baking paper.

Bake for about 10 minutes, they will be just starting to colour. Remove from the oven and sprinkle with sugar if you are not icing them.

Otherwise, allow to cool on the tray until you decorate them.

You can use chocolate or icing to decorate. You can also freeze the baked cookies to decorate later.
