Homemade Spooky Cookies
Chef's Delight
By Paula Heatley
A WORD FROM THE CHEF
With the week that's in it, this cookie recipe is a fun way to spend time with the children over Halloween break and the cookies are a real treat for trick-or-treaters (if they last that long)!
INGREDIENTS
225g plain flour
115 corn flour
115g icing sugar
225g butter
Jam or chocolate spread
METHOD
Preheat your oven to 190c (fan).
To make the cookies, place all the ingredients into a food processor and blitz until it starts to come together; then turn out onto a lightly-floured surface and bring together with your hands to form a dough.
If you want you can do by hand, but this will take a while, just rub the butter into the dry ingredients and keep working with your hands until to comes together.
Roll out your cookies - you can do this between two sheets of parchment paper and use any Halloween cookie cutters to cut out the cookies. I made ghosts by using a heart shaped cutter and cutting them in half and cutting out eyes and a mouth.
Spread one of your cookies with jam or chocolate spread and place the other one that you cut out the eyes on top so you can see the filling.
Place on a baking tray and bake for 10-15 minutes until just golden and allow to cool on the tray.
Then enjoy!
Happy Halloween everyone.
