Lamb shanks in the slow cooker

A WORD FROM THE CHEF

I love this slow cooker recipe. It’s so handy you you can pop it in the slow cooker and forget about it for a couple of hours and it’s just perfect on the darker, cold evenings as a tasty hot dinner - a real winter warmer!

INGREDIENTS

Four lamb shanks

2tbsp oil

Salt and pepper

One onion diced

Two cloves of garlic chopped

One celery stalk diced

Three carrots diced

Two cups of red wine

One tin of chopped tomatoes

1tbsp tomato purée

250ml chicken stock

Two sprigs of thyme

Two bay leaves

METHOD

Cook on high in slow cooker for four hours or in the oven at 170c until shanks are tender.

Season your lamb shanks and place in a pan with the oil to brown on each side, then place into your slow cooker.

In the same pan add your onion, celery, carrot garlic, and sauté this in the pan until it is soft then add in your red wine, thyme and bay leaves and allow this mixture to simmer for a few minutes. Then add in your stock and pour this mixture over your lamb shanks in the slow cooker.

Finally add your chopped tomatoes and tomato purée and then cover with a lid and allowed to cook for around four hours in your slow cooker until your lamb shanks are tender.

Then remove your lamb shanks from the liquid and set aside. Then mix up some cornflour with a little water and add this to your liquid to thicken it. Just stir for a moment or two and you should have a nice thick sauce. Pop your lamb shanks back in and keep warm until you’re ready to serve with some boiled potatoes or some lovely creamy mash. Enjoy!
