Dark chocolate tahini cookies

Always a popular treat and a great way to spend time with the children, this recipe takes just 15 minutes to prepare and 10-12 minutes to bake. They are likely to disappear a lot more quickly than that!

INGREDIENTS

(Makes 12)

One medium egg

100g caster sugar

95g tahini (sesame seed paste)

20g butter, melted

1tsp vanilla extract

70g ground almonds

55g plain flour

1/4 tsp bread soda

90g 70% dark chocolate, chopped

Sea salt to garnish

METHOD

Preheat your oven to 180C/160C fan and line two baking trays with parchment paper.

In a bowl, mix the egg, tahini, sugar, melted butter and vanilla until smooth.

Add the ground almonds, flour and soda. Mix.

Finally add the chopped chocolate.

Divide the cookie dough into 12 balls and place on the baking trays.

Using the palm of your hand, flatten them out.

Bake for 10-12 minutes or until golden brown.

Remove from the oven and while still warm, sprinkle on some sea salt and enjoy warm or cold.

Top Tip

Replace the plain flour with gluten free plain flour to make these cookies coeliac friendly.
