Chef's Delight: Raspberry Yogurt Ice Pops

A WORD FROM THE CHEF

These Raspberry Yogurt Ice Pops are incredibly easy to make and need only five ingredients. They are made with whole raspberries, yogurt, cream, vanilla and are sweetened with honey.

This makes them a healthy alternative to store bought ice pops as they contain whole fruit and a little protein from the yogurt.

INGREDIENTS

100 grams raspberries fresh or frozen

50 grams yogurt of your choice, I used plain skyr

30 grams cream

30 grams honey or more to taste

1/4 tsp vanilla extract

METHOD

Place all ingredients into a small food processor, blender or a jug if using a hand blender. Blend everything together for two to three minutes until completely smooth.

Pour into each ice pop mould and place the stick into each one.

Freeze for at least three hours until frozen solid.

Serve immediately or store in the freezer for up to one month.
